It's been said talk about tapas started around the change of the 19'nth century and that it happened in Andalucia. There you will find the world known aperitif wine el fino, which is a dry and light jerez, sherry. You served a glass of fino with a thin slice of ham. One day someone placed a slice of ham on top of his fino glass. The next time he ordered a sherry, he demanded that it should be served with “the lid on” - con tapa. Then it happened what often happens, the name spread to other dishes which got served with a glass of sherry. Everything was then on called tapas.
